Thattai Recipe-Crispy Rice Crakers for Krishna Jayanthi Special.

This is what you need:
Dry Rice flour – 1 cup
Urad dal flour – 1 tbsp
Pottu kadalai flour -1 tbsp
Chenna dal – 1 1/2 tbsp
Red Chilli powder – 1 tsp
Butter -1 tbsp
Asafoetida – 1/4 tsp
Salt and water as needed
Oil for deep frying
Preparation:
Roast urad dal until nice flavor comes. Now cool it to room temperature and grind into fine powder. Then sieve it and keep.
You can just powder, sieve and keep the pottu kadalai.
Soak channa dal for 1 hour (minimum 30 minutes required)
Method
In a bowl, mix together rice flour, urad dal flour, fried gram dal (pottu kadalai flour), asafoetida, chilli powder, salt and butter.
Add now add the channa dal that has been soaked for nearly an hour. Using water mix all of them and make a rough dough. The consistency of the dough should not be soft or watery, but a stiff dough.
**Note for you: The dough should be in such a consistency that when you flatten the thattai the corners of it should leave cracks. That shows your dough is well done.**
Make equal sized balls out of it. Take a plastic sheet and grease it with oil. Place a ball of dough and cover another greased side of the sheet. Now, flatten it with the bottom side of a bowl or tumbler as you wish.
Prick few holes with a fork to prevent it from puffing while frying. Now, heat oil in a heavy bottomed kadai. Now, drop the thattais into the kadai by gently removing them from the plastic sheet.
Deep fry the thattais both sides until they turn golden brown. Note, you should take the thattais out only when the oil bubbles stop. This ensures your thataais are fully cooked.
Now fry all the thattais in the same manner and store them tightly.
