NEI APPAM/SWEET PANIYARAM

This Nei appam or Sweet paniyaram is a very delicious at the same time a simple to make recipe. The sweet paniyaram is basically a traditional South Indian sweet dish made for pooja on celebrating Vinayaka Chavathi ,Krishna Janmashtami and Karthikai deepam . Let have a look at this simple and delicious dish.

Ingredients:

Rice – 1 cup

Jaggery – 3/4 cup

Coconut – 1/2 cup ; grated

Baking soda – a pinch (optional )

Cardamom / Elaichi – 2-4

Ghee – to roast

Method:

Soak rice in water for about four hours and then completely drain the water— Now put the rice, coconut and jaggery in a mixer and grind them into a smooth fine paste. The consistency of the batter shouldn’t be too thick or thin. It should be like dosa batter. Now take the batter and add baking soda and elaichi to it. Now take a paniyaram kadai and drop few amount of ghee in the hollow batter area. And then pour the batter inside the hollow region. Now again sprinkle drops of ghee on top of the appam and close the lid.

Now let the appams get ready in low flame. When the appam on the top side is cooked, you can turn them upside down and this portion will look golden brown in color. Now, allow it to cook for another 2-3 minutes. Switch off the stove and repeat the same for the remaining batter. Serve the nei appams hot and sweet.

Note:

You can also use rice flour. Instead of soaking and grinding rice, you can just grind jaggery and coconut and mix the rice flour along with them.
